🍷 After bottling: time to rest Bottling is often seen as the end of the winegrower's work. The wine is bottled, labelled and ready to taste. 👉 In reality, a new phase is beginning . Immediately after bottling, wine goes through a sensitive period, sometimes called its resting period . A quiet moment, rarely discussed, but essential for the wine to regain its balance. 🔄 During bottling, wine undergoes a series of small stresses: passing through the bottling line, pressure changes, controlled contact with oxygen, a sudden change of container. Individually, these may seem minor. Together, however, they represent a real shock for the wine . 🕰️ The weeks after bottling are rarely visible from the outside. There are no more interventions, technical operations or dramatic actions. 👉 Yet it is precisely during this time that the wine regains its balance. In general, it takes several weeks , and often two to three months , for the wine to recover its coherence, clarity and harmony after bottling. The time varies with the vintage, the wine's structure and its natural balance. 🍇 During this resting phase: aromatic balances reorganise, the structure stabilises, the texture becomes more cohesive, the wine becomes easier to understand. Tasting a wine too soon after bottling can give a misleading impression: muted aromas, a disjointed palate or unusual tension. 👉 This does not call the wine's quality into question. It simply means it has not yet found its rhythm again . 🎯 At the estate, this resting period is an integral part of our approach. We consider a wine truly ready only once it has regained stability and clarity, without rushing. This stage calls for: patience , observation , and acceptance that wine sometimes sets its own timetable. 🍷 L’Originel 2023 - Vin de France and L’Essentiel 2023 - AOP Bergerac are now entering this phase. A quiet time, without ceremony, yet decisive for what comes next. The wine is now in bottle. One essential thing remains: 👉 taking the time to be itself.
